To both of you, someone mentioned, and it was probally one of you two, that to get rid of the cliffs you only have to adjust your grey scale. Check this Talk section in 'How I Created Australia From GTOPO30 DEM Data'

I think that was me.

I started working on the Wiki under Creating Custom Maps. You guys should take a look and let me know what you think. I put a bit in there about Sea Level too.
