Very disappointed with realism

I've just started with this game. When I found out by reading the posts here that you can not deliver goods to multiple cities (a-b-c-d), I was actually shocked. I saw that all my goods were being dropped off at the first city and came on here to see what I was doing wrong. Got a lot of good info here. But the key essence of what a railroad was designed for realistically is missing from this game. How could this have been overlooked? When they started building railroads the whole idea was to go from town to town delivering and picking up goods and people and then going on to the next town. Can you imagine the difficulty of building a real railroad and having to build a separate line to each town that needed goods? Where did the makers get the idea that when a train reaches a town that the town takes everything? To me this has ruined the whole game for me. It's like having a flight sim and the makers forcing you to land at each town even though you have fuel enough to go to 10 towns.
I do have one question that I haven't found an answer for yet. Is there a way to modify the game speed? I enjoy more of the building than competition. So I'd like to slow it down. Best I've come up with is pausing to do things.
