Sometimes I would like to replace an industry because I can do more money with another one or grow a village more rapidly with a closer ressource. Some other times, I have a "vilain" industry in my city which is using raw materials to create a product I don't want. For example, I have a bomb factory in Detroit which is using steel while I have to ship a great quantity of cars all over America.
I guess removing an industry would cause confusing results in multiplayer so it may not be possible.
